Almond Roca (Dad's recipe)

1 cup butter
1 cup sugar
1 tbsp light corn syrup
3 tbsp water
1/2 cup coarsely chopped toasted almonds
4 oz chopped milk chocolate (3/4 cup)
1/2 cup finely chopped toasted almonds

Melt butter in heavy saucepan and add sugar. Stir over medium heat until the sugar dissolves. Add water and corn syrup. Cook, stirring constantly, to soft crack (290). Remove from heat, quickly stir in course nuts. Spread on a buttered baking sheet, immediately sprinkle chocolate over mixture and let stand 5 minutes. Sprinkle fine nuts over the mixture and chill until firm. Break into pieces and serve.
