Ingredients

  • No-Stick Cooking Spray
  • 1 cup Egg Beaters® Original
  • 6 flour tortillas (8 inch), warmed
  • 1 can (10 oz each) Diced Tomatoes & Green Chilies, drained
  • 1/3 cup shredded reduced fat Cheddar cheese

Preparation

Step 1

Spray large nonstick skillet with cooking spray; heat over medium heat. Add Egg Beaters. Cook without stirring until edges and bottom begins to set. Gently turn to scramble; continue cooking until set.

Spoon cooked Egg Beaters down center of each tortilla. Top each with equal amounts of tomatoes and cheese. Fold in opposite sides of each tortilla; roll-up burrito-style.
