Three-Ingredient Prime Rib Roast

Ingredients

  • 1/2 c finely ground coffee
  • 2 TBL kosher salt
  • 1 TBL freshly grd black pepper
  • 1/4 vanilla bean, split & seeds scraped
  • 12-lb bone-in prime rib roast (5 bones)

Preparation

Step 1

in bowl, thoroughly blend coffee w/ salt, pepper & vanilla bean seeds
set rib roast in roasting pan & rub all over w/ coffee mixture, concentrating most of the rub on the fatty part of meat
turn roast bone side down
let stand at room temp for 30 min

preheat oven to 450
roast meat for 15 min
reduce oven temp to 325
roast for abt 2-1/2 hrs longer, (125 for med-rare)

transfer roast to carving board
let rest for 20 min
scrape off any excess coffee rub
carve meat in 1/2"-thick slices

MAKE AHEAD
the coffee-rubbed roast can be refrigerated overnight
bring to room temp before roasting
