Ingredients

  • 4 large chicken breasts - or you can also use smaller pieces for this
  • 2 sleeves Ritz crackers (or you can use about half a box of Cheese-its
  • (1) 10 ounce can cream of chicken soup
  • 2 tbsp sour cream
  • 2 tbsp butter
  • 1/2 cup milk
  • 3 cups cheddar cheese, shredded
  • 1 tsp dried or fresh parsley

Preparation

Step 1

1. Cut chicken breasts into 3 equal pieces, or if you're using chicken tenders (slices) just leave them
the way they are.
2. Crush the Ritz crackers.
3. Add the milk to a small bowl.
4. Add the shredded cheese to a small bowl.
5. Add the Ritz crackers to another small bowl.
6. Line up your bowls in this order: milk, cheese, crushed crackers.
7. Dip a piece of chicken in the milk.
8. Then roll the chicken in the cheese.
9. Roll the chicken in the crushed crackers and add to a greased baking dish or pan.
10. Repeat until all the chicken pieces are coated.
11. Top with remaining cheese and crushed crackers.
12. Sprinkle with parsley.
13. Cover the pan and bake at 350 degrees for about 30-40 minutes or until chicken juices run clear.
14. Remove the foil and bake for 10 minutes to crisp up the chicken.
15. In a medium sized saucepan, on medium high heat, combine cream of chicken soup, butter, and
sour cream.
16. Whisk until thoroughly mixed.
17. Once sauce is mixed and warmed, pour over chicken and serve.
