Cherry Cobbler #1

Ingredients

  • 1 1/4 cups sugar
  • 1 cup flour
  • 3 T. cornstarch
  • 1 T. sugar
  • 1/4 t. cinnamon
  • 1 1/2 t. baking powder
  • 4 cups red tart cherries, pitted
  • 1/2 t. salt
  • 1/4 t. almond extract
  • 1/2 cup milk
  • 3 T. shortening

Preparation

Step 1

Heat oven to 400 degrees. Mix 1 1/4 cup sugar, cornstarch and cinnamon in saucepan. Stir in cherries and almond extract. Cook, stirring constantly until mixture thickens and boils. Boil and stir for 1 minute. Pour into an ungreased baking dish. Cut shortening into flour. Add 1 tablespoon sugar, baking powder, and salt until mixture resembles fine crumbs. Stir in milk. Drop dough by spoonfuls onto cherry mixture. Bake until topping is golden brown; about 25 to 30 minutes.
