Orange Pecan Salmon

Ingredients

  • 1 ) 1 cup chopped pecans, toasted
  • 2 ) 1 cup orange marmalade
  • 3 ) 1/2 cup reduced sodium soy sauce
  • 4 ) 1/4 tsp salt
  • 5 ) 1/4 tsp pepper
  • 6 ) 4 salmon fillets (6 oz each/1 inch thick)

Preparation

Step 1

1. In a small bowl, combine the first five ingredients. Take 1 cup of mixture and place into a plastic zip lock with fish, coating fish and place in frig for 30 minutes. Set aside the remaining mixture

2. Drain mixture and discard. Place the salmon in a greased 11 x 7 baking dish and Bake uncovered at 350 for 20-25 min or until easily flakes

3. In a small sauce pan, bring the reserved mixture to a boil; cook until liquid is reduced to 3/4 cup. Serve with the salmon.
