Orange Couscous

Ingredients

  • 1 cup orange juice
  • 1 cup water
  • 1 teaspoon ground cumin
  • 1 package (10 ounces) couscous
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons reduced-sodium soy sauce
  • 1/4 cup minced fresh cilantro
  • 2 tablespoons minced fresh basil or 2 teaspoons dried basil
  • 2 tablespoons minced chives
  • 1 teaspoon minced fresh gingerroot
  • 1/4 teaspoon salt
  • 1 can (11 ounces) mandarin oranges, drained
  • 1/4 cup slivered almonds, toasted

Preparation

Step 1

In a large saucepan, bring orange juice, water and cumin to a boil. Stir in couscous; remove from the heat. Cover and let stand for 5 minutes or until liquid is absorbed; fluff with a fork.

Transfer to a large bowl; cool.

In a small bowl, whisk the oil, lime juice and soy sauce. Stir in the cilantro, basil, chives, ginger and salt. Pour over couscous and toss to coat. Add oranges and almonds; toss gently. Refrigerate until serving. Yield: 8 servings.
