Ingredients
- 3 chicken breasts halved (3 #) ¼ c. all purpose flour
- 1 can 10-3/4 oz. chicken broth ¼ tsp. nutmeg
- ¼ c. butter 1 cup milk
- ½ c. chopped onion 3 slices baked ham, 1/8” thick, halved
- 1 cup sliced fresh mushrooms 2 T. grated parmesan cheese
- 2 T. chopped parsley
Preparation
Step 1
In large skillet, boil broth and chicken. Simmer covered 20 min. or till tender. Remove chicken, reserving broth. Meanwhile, melt butter, sauté onion and mushrooms 2 min. Remove from heat; stir in flour, nutmeg, gradually stir in milk and 1-1/2 c. reserved broth. Bring to boil and simmer 1 min. Remove from heat. Alternate chicken and ham in 12” oval baking dish—pour mushroom sauce over. Sprinkle with cheese. Bake uncovered for 15 min. in 400 oven. Garnish with parsley.
