Chicken and tomato basil cream sauce

Ingredients

  • Four boneless, skinless chicken breast halves
  • 3 tablespoons butter or olive oil
  • 2 plum tomatoes chopped
  • 1 small onion chopped
  • 1/4 teaspoon salt
  • 1/4 cup white wine or chicken broth
  • 1/2 cup heavy cream
  • 2 teaspoons fresh basil leaves cut into thin strips

Preparation

Step 1

Season chicken with salt and pepper.
Melt butter in 12 inch skillet; cook chicken for eight minutes on medium high heat until thoroughly cooked; turning once.
Remove; set aside.
Melt 1 tablespoon butter; cook tomatoes salt and onions until tender -- about three minutes.
Stir in wine are brought; cook two minutes or until wine evaporates.
Stir occasionally.
Stir in cream; reduce heat to low; return chicken to skillet.
Simmer uncovered 4 minutes or until sauce is thick and and chicken is heated through.
Garnish with basil
