Ingredients
- CAKE:
- 3 eggs
- 1 c sugar
- 2/3 cooked pumpkin
- 1 tsp lemon juice
- 34 c flour
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp nutmeg
- 1/2 tsp salt
- Filling:
- 1 c confec sugar
- 6 oz cream cheese
- 4 TBSP butter
- 1/2 tsp vanilla

Preparation
Step 1
CAKE:
beat eggs in mixing bowl @ high speed for 5 minutes
beat in sugar until blended
stir in pumpkin and lemon juice
combine flour, baking powder, spices & salt
fold into pumpkin mixture
spread in greased/floured cookie sheet 15 x 10 x 1
Bake at 375 for 15 mins
remove from pan--turn onto clean towel dusted w/conf sugar
start at narrow end & roll towel & cake together and cool
FILLING:
blend until smoothe
Unroll cake, spread filling to within 1" of edges
roll back up and chill
dust w/add'l conf. sugar
