    cooked pumpkin

    tsp lemon juice

  • 34

    c flour

    tsp baking powder

  • 2

    tsp cinnamon

  • 1

    tsp ginger

  • 1/2

    tsp nutmeg

  • 1/2

    tsp salt

  • Filling:

  • 1

    c confec sugar

  • 6

    oz cream cheese

  • 4

    TBSP butter

  • 1/2

    tsp vanilla

Directions

CAKE: beat eggs in mixing bowl @ high speed for 5 minutes beat in sugar until blended stir in pumpkin and lemon juice combine flour, baking powder, spices & salt fold into pumpkin mixture spread in greased/floured cookie sheet 15 x 10 x 1 Bake at 375 for 15 mins remove from pan--turn onto clean towel dusted w/conf sugar start at narrow end & roll towel & cake together and cool FILLING: blend until smoothe Unroll cake, spread filling to within 1" of edges roll back up and chill dust w/add'l conf. sugar
