Ingredients

  • 6 6 6 c chopped broccoli florets
  • 3/4 3/4 4 c minced shallots (about 4 large)
  • 2 2 2 T Dijon
  • 1 1 1 t fresh thyme
  • 1/2 1/2 1/2 t minced garlic
  • 1/8 1/8 1/8 t nutmeg
  • 3/4 3/4 3/4 t salt
  • 1/2 1/2 1/2 t pepper
  • 2 2 2 lb Yukon Gold potatoes
  • Cooking spray
  • 3 3 3 T flour
  • 1 1/2 1 1/2 1/2 c milk
  • 1 1/4 1 1/4 1/4 c chicken broth
  • 2 2 2 T butter, cut into small pieces
  • 3/4 3/4 3/4 c shredded Swiss

Preparation

Step 1

Preheat oven to 375. Combine first 6 ingredients in large bowl. Sprinkle with ½ t salt and pepper. Toss to combine. Layer one third of potato slices in a 9 x 12 baking dish coated with cooking spray, overlaping to fit; top with half the broccoli mixture. Repeat layers, ending with potato. Sprinkle evenly with remaining ¼ t salt. Place 3 T flour in a medium bowl. Gradually add milk, stirring constantly with a whisk. Stir in broth. Pour milk mixture over potato mixture. Top evenly with butter. Cover and bake at 375 for 1 hour. Uncover, sprinkle with cheese. Bake 25 minutes or until browned. Cook on wire rack 10 minutes.
