Red Velvet Cupcakes W/ Cream Cheese Frosting & Coconut

Red velvet cupcakes a delicious take on the resurgence of the popularity of red velvet cake. I like to make mini cupcakes as these are so rich!

Ingredients

  • 2 1/4 cups. AP flour
  • 1 tsp salt 2 bottles (1 oz each) red food coloring
  • 3 Tb cocoa powder (I prefer extra dark cocoa powder)
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 1 1/2 cups sugar
  • 1 stck softened salt free butter
  • 1 tsp vinegar
  • 1 tsp baking soda
  • Cream cheese frosting (your favorite recipe)
  • Coconut

Preparation

Step 1

Combine flour & salt in a med bowl. Combine cocoa & food color in small bowl. Combine buttermilk & vanilla in med bowl. Beat sugar & butter in lg bowl. Add eggs 1 at a time, beating after each. Add cocoa mix blending. Add flour alternating w/ buttermilk beat until just blended. Mix vinegar & baking soda in sm bowl & fold into batter. Put batter into cupcake tins, bake at 350 degrees for 18-20 min. For regular cupcakes. Top w/ cream cheese frosting & coconut flakes or shreds.
