Desserts: Dark Chocolate Cherries

Ingredients

  • 1 1/2 cups walnut halves
  • 9 ozs bittersweet chocolate, finely chopped
  • 1 cup dried sour cherries
  • 2 T finely chopped crystallized ginger

Preparation

Step 1

Preheat oven to 350 degrees
Spread walnuts and toast 8 minutes, cool and chop
Line baking sheet with parchment or wax paper
In a glass bowl, heat 2/3's of chocolate in the microwave at high power in 30 second bursts til just melted
Stir til smooth
Add remaining chocolate, stir til melted
Stir in walnuts, cherries and ginger til evenly coated
Scrape mixture onto sheet and spread into 12X 8" rectangular pan
Refrigerate for 10 minutes til firm enough to cut
Cut into 6X8 rows
