Pasta with Vodka Sauce

Ingredients

  • 1 Tbs butter
  • 1 Tbs olive oil
  • 3 cloves garlic, minced
  • 1 C vodka
  • 4 C peeled whole tomoatoes, chopped. Juice reserved
  • Crushed red pepper
  • Salt
  • 3/4 C whipping cream
  • 1 c peas

Step 1

Melt butter and olive oil in a saucepan over medium heat. Add the garlic and cook to a light gold color. Add vodka and cook a minute or so until the alcohol evaporates.

Add tomatos, red pepper and salt to taste. Simmer about 10 minutes. If using canned tomatoes, measure 1/4 c of reserved juice. Add tomato juice, cream and peas and cook until sauce is reduced and thickened, about 5 more minutes.

Spoon sauce over pasta, Sprinkle with grated parmesan.
