Peanut Butter Banana Ice Cream!

Ingredients

  • 1 cup skim milk (or vanilla soy milk)
  • 1/2 cup cottage cheese (OR 1 6oz container low fat plain yogurt, I like plain Greek yogurt because of the high protein content)
  • 2 tablespoons Powdered Peanut Butter (or 2 tbs regular Peanut Butter)
  • 1 small banana, mashed
  • 3-4 stevia packets, or to taste (you could also use splenda packets, or sweetener of choice)
  • a pinch of salt
  • Optional variations: Crushed peanuts, crushed 100 calorie peanut butter cookies, crushed teddy grahams, whipped cream topping, light ice cream syrup topping, or even a cherry on top!

Preparation

Step 1

Mix milk, cottage cheese (or yogurt), peanut butter, banana, and sweetener together in the blender or food processor until everything is smooth and well combined.
Pour mixture into ice cream maker. Follow your machine’s instructions for freezing. (I have a Cuisinart Automatic Ice Cream Maker~and simply turn it on for 20 minutes to freeze).
You can eat it right away for a softer (frozen yogurt-like) consistency, or you could put it in the freezer (in a sealed tupperware) for up to an hour for a firmer (ice cream-like) consistency.
