Ingredients

  • 3 cups of fat-free vanilla ice cream, softened
  • 2 cups of fat-free strawberry ice cream, softened
  • 16 reduced fat vanilla wafers
  • 1/2 cup liquid egg whites, or 3 large egg whites, at room temperature
  • 1/8 tsp. cream of tartar
  • 1/4 cup sugar
  • 1/4 cup Splenda
  • 1/4 vanilla extract

Preparation

Step 1

Choose a medium large bowl that will hold 1 1/2 quarts and the top will fit a 9 inch pie pan.
Line the bowl with plastic wrap making sure there is excess on the sides.
Evenly and firmly pack vanilla ice into the bowl, smooth the surface. Make sure to use a clean spatula and repeat with the strawberry ice cream. Make sure the ice cream layers are flat place vanilla wafers rounded side down, in a single layer. Cover well, freeze until firm, at least 8 hours.

Preheat oven to 500 degrees.

To make meringue,set out all ingredients. Combine egg whites and cream of tartar in large bowl. Beat with electric mixer at high speed until fluffy and slightly stiff, about 3 minutes. While still beating add sugar,Splenda and vanilla extract. Continue beating until mixture is fully blended and stiff peaks form, 2-3 more minutes. Remove bowl from freezer then turn over into a 9 inch pie pan. Quickly and evenly spread meringue over the ice cream. Place pie pan on a cookie sheet. Bake in oven until meringue is brown, about 3 minutes.

Keep left overs in freezer
