Ingredients
- 6 3/4 tsp dry quick rise yeast (for 1/2 recipe - use 3 tsp + 1/4 tsp + 1/8 tsp yeast
- 2 T. sugar
- 1/2 cup lukewarm water
- 8 cups lukewarm water
- 1 cup oil
- 3 T. salt
- 21 cups flour (3 cups whole wheat, 6 cups rye, 12 cups white)
Preparation
Step 1
Combine yeast, sugar and 1/2 cup water in small bowl - let rise for 10 minutes.
In large bowl, combine water, oil, salt and flour. Add in yeast mixture. Knead a little in large bowl.
Put on well-floured surface and knead 10 minutes. Grease large pan and put in pan. Cover with towel and let rise in undrafted area until double.
Punch down and let rise again until double.
Knead again for 10 minutes. Let rest a little (10 minutes).
Cut into six pieces and form into six loaves by punching down a little and forming. Put in greased bread pans and let rise until double (cover with towel).
Bake at 400 degrees for 10 minutes and 350 degrees for 50 minutes.
