Mesclun Salad with Cucumber and Feta

Ingredients

  • 2 tablespoons tomato juice
  • 1 tablespoon rice vinegar
  • 1 teaspoon extravirgin olive oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 6 cups gourmet salad greens
  • 1/3 cup thinly sliced peeled English cucumber
  • 2 tablespoons crumbled feta cheese
  • 2 tablespoons thinly sliced green onions

Preparation

Step 1

To prepare dressing, combine first 6 ingredients in a small bowl, stirring with a whisk.

To prepare salad, combine the salad greens and remaining ingredients in a large bowl. Drizzle dressing over salad, tossing gently to coat.
