Black currant Berry Hazelnut Crumble Cake

So good & for variety change up the jam.

Ingredients

  • Crumble topping:
  • 1 Tb soft butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 cup flour
  • Baking powder/ soda (as needed to substitute for self rising flour)
  • 1/3 cornmeal
  • 1 tsp baking powder (in addition to the above)
  • Lemon zest
  • 1/4 cup Greek yogurt or sour cream
  • 3/4 cup black currant jam
  • 1 1/4 cup raspberries
  • 1/2 cup hazelnuts
  • 1/3 cup demara sugar
  • 5 Tb chilled butter cubed
  • 3/4 cup flour

Preparation

Step 1

Cake:
Put all ingredients in bowl except jam & raspberries & mix. Spoon batter into prepared springform pan. Stir jam & spoon over top of the batter. Swirl over top.top w/ part of crumbs then raspberries then remainder of crumbs.
Crumbs:
Chop nuts. Mix sugar, butter & flour until crumbly. Add 1 Tb cold water & beat again until crumbs. Add nuts.
Bake at 350 degrees for 40-55 min.
