Lemon Rosemary Whitefish

Ingredients

  • 4 6oz whitefish fillets
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 2 cloves minced garlic
  • 2 sprigs Rosemary leaves finely chopped (additional sprigs for garnish)
  • 2 teaspoons lemon zest

Preparation

Step 1

1. Heat oven 400. Lightly coat a rimmed baking sheet with non stick cooking spray. Pat fillets dry and place on baking sheet about 2 inches apart. Set aside.

2. In a small bowl combine oil, lemon juice and garlic. Brush on top of each fillet. Sprinkle evenly with zest and rosemary. Season with salt and pepper to your taste

3. Place baking sheet in 400 oven and bake 15 minutes or until fish flakes evenly. Remove from oven and transfer to 4 plates. Garnish with rosemary sprigs and serve
