Ingredients
- For topping:
- 1 cup ap flour
- 1/2 cup unsweetened cocoa
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/3 cup semisweet chocolate chips
- 1/4 cup unsalted butter
- 1 cup sugar
- 1 tsp instant coffee
- 2 lg eggs
- 1/4 cup (1/3) Bailey's Irish cream
- 1 tsp vanilla extract
- 2 cups cold whipping cream
- 1 heaping tbs sugar
- 1 tbs Bailey's Irish Cream

Preparation
Step 1
Preheat oven to 350 degrees
Combine flour, cocoa, baking soda and salt in small bowl stirring with a whisk.
Place the chocolate chips and butter in large bowl and microwave on high for 1-1/2 mins till melted stirring every 30 secs. Cool slightly. Add sugar, instant coffee, eggs, Bailey's and vanilla, stirring well with a whisk. Microwave at high for a min or until sugar dissolves, stirring halfway. Fold in the flour mixture, stirring just until moist. Spread batter in pan with cooking spray. Bake at 350 for 20 mins. Cool completely on wire rack.
For Topping
Beat together to stiff peaks
