Grilled Barbecued Pork Medallions

Ingredients

  • Marinade:
  • 2 lbs. pork tenderloin, fat removed and meat sliced in 1 1/2 inch medallions
  • 1/3 cup soy sauce
  • 1/2 cup sherry wine
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 garlic clove, smashed and chopped
  • 2 tablespoons fresh chopped ginger
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Preparation

Step 1

Mix marinade ingredients, add pork and let stand 20 minutes.

Place pork medallions on hot grill. Cook 4 to 5 minutes, basting often, turning once. Season well.
