Shortbread Cookies

Ingredients

  • 4 sticks unsalted butter
  • 1 cup sugar
  • 1 tsp pure vanilla extract
  • 3 1/2 cup all-purpose flour
  • 1/4 tsp salt

Preparation

Step 1

Preheat oven to 350 degrees.

Mix together sugar and butter. Add vanilla, salt and flour.

Use electric mixer to combine all ingredients until dough comes together.

Sprinkle flour onto work surface and take out a handful or so of dough onto work surface, kneading until it comes together.

Make into a disk and wrap it in plastic. Continue in this manner until all dough has been used. Place dough disks in refrigerator for atleast 1/2 hour.

Roll each disk onto a flour surface until 1/2 inch thick. Cut using cookie cutter.

Place cookies on an ungreased cookie sheet and bake for 20 minutes until they are light-beige in color.

Place on parchment paper until cooled.

* You can melt chocolate and dip sections of the cookie until chocolate hardens and serve cookie with partial chocolate for alternate version.
