This is my favorite bread for everything, toast, sandwiches plain dunked in hot beef stew! Slightly sweet & crunchy, it is so good.

Ingredients
- 7 cups bread flour
- 1/2 cup coarse cornmeal
- 1/2 cup oats
- 1/2 cup brown sugar
- 1/3 cup wheat bran
- 4 tsp salt
- 3 Tb yeast
- 1/2 cup cooked brown/ wild rice
- 1/4 cup honey
- 3/4 cup buttermilk
- 2 cup water
- 3 Tb poppy seeds for topping
Preparation
Step 1
Mix dry ingredients add rice. Add 1 1/2 cup of water (save 1/2 cup for kneading) add buttermilk. Squeeze ingredients to a ball. Add water as needed as you knead the bread. Knead 12-15 min. Cover & let rise for 1 hour. Fold & shape into loaves brush w/ egg wash (1 egg + 4 cups water beaten) top w/ poppy seeds & let rise covered. Bake in steamed oven at 350 degrees for 45 min.
