Ingredients
- 1 ( 4 oz.) pkg long grain and wild rice mix
- 1/3 c. chopped onion
- 3 T. butter
- 3 T. flour
- salt and pepper to taste
- 1 c. half and half
- 1 c. chicken broth
- 1 T. chopped fresh parsley
- 2 c. cubed cooked chicken
- 1/2 c. slivered almonds
- 1/3 c. pimentos
Preparation
Step 1
Cook the wild rice according to the package directions; set aside.
Saute' the onion in the butter in a skillet. Stir in the flour, salt and pepper. Add the half-and-half, broth and parsley. Bring to a simmer over medium heat. Cook until thickened, stirring constantly. Add the chicken, wild rice, almonds and pimentos and mix well. Spoon into a greased 8x8 baking dish. Bake at 325 degrees for 30 minutes.
