Ingredients
- 5 lbs. redskin potatoes, quartered
- 1 T. garlic, minced
- 3 cubes chicken bouillon
- 8-oz. container sour cream
- 8-oz. pkg. cream cheese, softened
- 1/2 c. butter, softened
- salt and pepper to taste
Preparation
Step 1
Place potatoes, garlic and bouillon in a large saucepan; cover with water. Bring to a boil; cook just until potatoes are tender, about 15 minutes. Drain, reserving cooking liquid.
Place potatoes, sour cream and cream cheese in a large bowl; mash potatoes, adding cooking liquid as needed until desired consistency is reached. Spoon into a slow cooker; cover and cook on low setting for 2 to 3 hours. Stir in butter, salt and pepper just before serving.
Serves 10 to 12.
