Carrot Salad

Ingredients

  • 4 large carrots
  • 1/2 cup raisins
  • 1/2 cup chopped pecans or walnuts
  • 1/2 tsp. salt
  • 2 tsp. grated lemon peel
  • 1 tbsp.lemon juice
  • 1/2 cup vanilla or plain yogurt
  • 1/2 cup mayonnaise

Preparation

Step 1

1. Scrape carrots well; soak them in ice water for 1 hour
2. Grate carrots coarsley into a bowl
3. Lightly mix in raisins,pecans,salt and lemon juice
4. Mix yogurt,mayonnaise together;fold into salad mixture
5. Chill until ready to serve
