Ingredients
- 4 boneless skinless chicken breast halves
- 1/4 tsp salt
- 1/2 tsp pepper
- 1 1/2 c. water
- 3/4 c. quinoa
- 1/4 c. mint
- 2 scallions, chopped
- 3 T red wine vinegar
- 1 T fresh orange juice
- 1 tsp orange zest
- 1 tsp Dijon mustard
- 1 T olive oil
- 2 T chopped walnuts
- 1 c. diced apple with peel
- 1/2 c. diced red onion
- 1/2 c. dried cherries

Preparation
Step 1
Coat pan with cooking spray - heat to Med.
Season chicken with S and P
Cook chicken about 10 min turning once, till cooked through.
Cool chicken 2 to 3 min., then slice into thin strips.
Cook quinoa in water - about 15 min.
Refrigerate quinoa to cool. (30 min)
Make dressing (mint through oil)
Add walnuts, apple, onion and cherries to dressing
Add quinoa
Serve topped with chicken.
