Carrot Apple Pudding

Ingredients

  • 1/2 cup grated carrot
  • 1/2 small apple, pared, cored and grated
  • 2 eggs, separated
  • 1 tsp grated lemon rind
  • 1/2 tsp lemon juice
  • 2 tbsp plus 1 1/2 tsp enriched flour
  • 2 tbsp raisins
  • Artificial sweetener to equal 2 tsp sugar
  • 1 tsp margarine

Preparation

Step 1

Preheat oven to 350 F. In medium bowl combine carrot, apple, egg yolks, lemon rind, and juice. Stir in flour, raisins and sweetener. In separate bowl beat egg whites until stiff peaks form; fold into carrot mixture. Grease a shallow 2 cup baking pan with margarine; transfer carrot pudding to pan. Bake for 30 minutes or until top is lightly browned.
