Tuscan Chicken and Peppers

Ingredients

  • 1 whole chicken cut into serving pieces (I used breast on the bone)
  • 1 1/2 lbs baby potatoes
  • 1 large red onion, sliced
  • 3 red peppers, chopped
  • 1 Tbsp. Tuscan seasoning ( I used McCormick's Italian)
  • 1/4 cup roasted garlic
  • Italian Vinaigrette (I used balsamic)

Preparation

Step 1

Heat oven to 400*F. In medium roasting pan, toss chicken, potatoes, onion and peppers with Tuscan seasoning and vinaigrette. Roast 30-35 minutes or until chicken is done, stirring once.
