Cheese and Beer Soup

  • 1/4 cup butter
  • 1 lb. andouille sausage, sliced thin
  • 1/2 cup green onion
  • 1/2 cup flour
  • 1/2 lb. or about 1 heaping cup shredded cabbage
  • 1/2 bottle beer
  • 3 1/2 cups chicken broth
  • 1 Tbsp. creole mustard
  • 2 cups shredded cheddar cheese
  • 1 cup heavy whipping cream, warmed
  • 1 cup whole milk, warmed

Preparation

Step 1

Melt butter on medium heat in a large skillet. When melted, add sausage and saute 3 minutes. Add onion and saute another 2 minutes. Add flour and saute 5 minutes, stirring occasionally.

Next, add cabbage, beer, chicken broth and mustard. Lower heat to medium low and cook for 15 minutes. Add cheddar and cook 10 minutes.

Meanwhile, temper cream sand milk by slowly warming in a saucepan. When warm, slowly pour into soup. Reduce heat to low and cook for 15 minutes.

Serve immediately.
