Brussels Sprouts - shredded with bacon

Ingredients

  • 1/2 lb. bacon, diced small
  • olive oil, if needed
  • 1 3/4 lb. brussels sprouts, trimmed and shredded (10 cups)
  • 1 tbsp. chopped fr3esh rosemary leaves
  • 3 Tbsp. fresh lemon juice (from 1 lemon)
  • salt and pepper

Preparation

Step 1

In a large non-stick skillet, cook bacon until crisp. With a slotted spoon, transfer to paper towels to drain. Pour off all but 1/4 cup drippings (if necessary, add enough oil to measure 1/4 cup). Add brussels sprouts and cook, stirring occasionally, until crisp-tender, 10 minutes. Stir in rosemary and cook until fragrant, about 2 minutes. Stir in bacon. Remove from heat, stir in lemon juice, and season with salt and pepper.

Serve warm or at room temperature.
