Ingredients
- 1 LB SPAGHETTI
- 1 T OLIVE OIL
- 3 THICK SLICES BACON CHOPPED
- 1 SMALL ONION CHOPPED
- 5 LARGE EGGS
- 1/2 C ROMANO CHEESE
- PEPPER
- 1/4 C CHOPPED PARSELY
Preparation
Step 1
Cook spaghetti
In 12 inch non-stick skillet heat oil on medium for 1 minute
Cook bacon
Transfer bacon to paper towels
Pour off all but 2 T fat add onion and cook until tender.
Remove skillet from heat
Reserve 1/4 cup of pastas cooking water
Drain pasta add to skillet with bacon and onion and 1/4 cup of reserved cooking water
Cook on medium until water is absorbed
In seperate bowl whisk eggs romano and pepper together
Remove skillet from heat stir in egg mixture add parsley toss until well coated.
