Baked Yellow Squash Casserole

Ingredients

  • 4-5 Med. Yellow Squash, thinly sliced
  • 1/2 Med. Onion, finely chopped
  • 2-3 thick sliced bacon, crisply fried
  • Plain Bread Crumbs
  • Cheddar Cheese
  • Salt & Pepper to taste
  • 1/2 stick of butter or margarine

Preparation

Step 1

Place squash and onions in pot of water to cover and boil until tender, drain well.

Place into a bowl with butter and mix together. Then mix rest of ingredient, except the bread crumbs to your taste. Mix in the bread crumbs until it holds together.

Put casserole into a greased dish, bake in 350 degree oven for 1 hour or until it browns on top. Sprinkle top with more cheddar cheese and let it melt.

Serve

The casserole freezes well.
