Ingredients
- 8 oz. pkg. uncooked penne pasta
- 2 Tbsp. olive oil\1 garlic clove, minced
- 2 cans Italian diced tomatoes, undrained
- 1 can white kidney or cannellini beans, rinsed and drained
- 1 pkg. (10 oz.) fresh spinach, trimmed
- 1/4 cup sliced 5ripe olives
- 1/2 tap. salt
- 1/4 tsp. pepper
- 1/2 cup grated Parmesan cheese
Preparation
Step 1
Cook pasta according to directions. Meanwhile, in a large skillet, heat oil over medium-high heat. Add garlic; cook and stir 1 minute. Add tomatoes and bens. Bring to a boil. Reduce heat; simmer, uncovered, 5-7 minutes to allow flavors to blend. Stir in spinach, olives, salt, and pepper; cook and stir over medium heat until spinach is wilted. Drain pasta; top with tomato mixture and cheese.
