Seafood Stuffed Salmon

Ingredients
- 2 lbs fresh Salmon, 2 large or 4 small pieces
- 10 large prawns, chopped into small pieces
- 6 oz fresh crab meat
- 5 oz chopped spinach
- 1/4 small onion, chopped
- 6 tbsp stuffing mix (seasoned bread cubes, such as Stove Top)
- 2 cloves garlic, minced
- 6 Tbsp butter
- 3 green onions, chopped, white parts only
- 1/4 cup white wine
- 1/4 tsp garlic powder
- Salt & Pepper to taste
- Extra Virgin Olive oil
Preparation
Step 1
Preheat oven to 370 degrees.
In a large skillet, melt butter. Add onions and cook until soft but not brown. Add spinach and stir, cooking until just starting to wilt. Add garlic, crab and shrimp and stir for 2-3 minutes until shrimp are no longer translucent. Add white wine, then bread cubes. Stir until combined and the stuffing is soft. Add garlic powder, and salt pepper. Remove from heat.
Cut slits in sides of thickest part of the salmon pieces and place on an aluminum wrapped baking sheet. Stuff with the seafood mixture.
Drizzle olive oil over each piece and sprinkle with salt and pepper. Bake for approximately 20 minutes, or until fish is cooked through and flakes with a fork.
