Berries and Cream

One other switch I always make is with my desserts. Out go the heavy, gain-weight-just-thinking-about-it desserts, and in with fluffy, light fruity ones. This recipe for berries and cream is exactly the kind of treat I reach for in warm weather. The tartness of the lime juice mixed with the fresh berries (and a little bit of sugar), topped with the vanilla cream is perfection - especially on a hot summer day. And it is one dessert recipe you won't feel guilty devouring!

Ingredients
- 4 cups of berries (I used strawberries, raspberries, and blackberries - you can use whatever you'd like)
- 2 tablespoons of sugar
- The juice of two limes
- 1 small package of instant vanilla pudding
- 1 cup of whipping cream
- 1/2 cup of milk
Preparation
Step 1
Mix together the berries, sugar, and lime juice in a large bowl. In a separate bowl, whisk together pudding, cream, and milk for two minutes. Let it refrigerate for about 5 minutes until it is set up. Top the berries with pudding mixture - with as much or as little as you'd like!
