Ingredients
- 1-1/4 c bananas
- 1 c. plus 2 tbsp. sugar
- 2 eggs
- 1/4 c. oil
- 2-1/4 c. cake flour
- 1/2 c. flour
- 1 scant tbsp. baking soda
- 1/2 c. buttermilk

Preparation
Step 1
Mash bananas with a fork and stir in sugar until well mixed. Add eggs and oil and mix thoroughly. Add both flours and soda. Stir in buttermilk until dry particles are moistened, but batter is still lumpy. Bake in lined muffin pans in 400o oven for 16-18 min.
