Ingredients
- 4 tsp olive oil divided
- 8 bone in skinless chicken thighs
- 3/4 tsp salt divided
- 1/2 tsp pepper
- 1 t lemon zest
- 4 c thinly sliced leeks
- 3 t lemon juice
- 2 tsp honey
- 2 t chopped parsley or chives
Preparation
Step 1
1) preheat oven to 400
2) heat large oven proof skillet over md heat. add 2tsp oil and swirl to coat. sprinkle chicken with 1/2 tsp salt and pepper. massage zest into chicken. place in pan and cook 4 minutes each side til browned. remove from pan and keep warm
3)add remaining oil to pan and swirl to coat. add leek and remaining 1/4 tsp salt; cook 15 minutes or til leek begins to brown; scraping brown bits from pan. remove pan from heat and stir in lemon juice and honey. return chicken to pan. mound leeks on top of chicken. bake at 400 for 15 minutes. top with parsley or chives
