Rhubarb Spice Cake

A great way to use Rhubarb in a different way.

Preheat oven to 375 degrees. Wash & cut rhubarb into 3/4 inch thick pieces (makes about 1 quart). Mix rhubarb & 3/4 cups of sugar to coat rhubarb. Spoon into ungreased 9 X 9 X 2 pan. Sift together the flour, baking soda, & salt. In separate bowl cream together butter, cinnamon, ginger, allspice, nutmeg, & marmalade. Add the remaining 1/2 cup sugar & egg. Beat until well blended. Add flour mixture alternating with milk & molasses blending well after each addition. Stir in nuts. Spread batter over rhubarb. Bake 35 mins or until tester comes out clean. Serve topped with whipped cream.
