Ingredients

  • 1

    pound boneless skinless chicken breast (in strips)

  • Granny Smith apples (in strips)

  • 1/2

    cup of onions vertically sliced

  • 1 3/4

    cups of carrots (julienned)

  • 2

    tablespoon of olive oil

  • Green pepper (in strips)

  • Red pepper (in strips)

  • Black pepper

  • Chicken seasoning

  • Salt

  • Cube seasoning Made in Nigeria cube seasoning)

  • 1

    teaspoon of dried basil

  • 1

    teaspoon of dried oregano

Directions

1) Stir fry the stripped chicken breast in a tablespoon of oil, season with salt, black pepper and chicken seasoning. Cook until lightly browned and cooked. Then remove from the pan. 2) Put 1 tablespoon of oil in the pan and stir fry the sliced onions, julienned carrots, stripped green pepper and stripped red pepper. Add the seasonings (salt, black pepper, basil and oregano). Stir fry till carrots are tender. Let the bell peppers go in last. 3) Return the cooked chicken back into the pan with the vegetables, let it cook for about a minute. 4) Reduce the heat completely and stir in the apples. Remove from heat. Serve over hot rice.
