Apricot Nut Bread

Ingredients

  • 1/2 pkg dried apricots
  • 1 c. sugar
  • 6 T. butter (softened)
  • 1/3 c. water
  • 3/4 c. frozen or fresh orange juice
  • 2 eggs (slightly beaten)
  • 2 c. flour
  • 3 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t. salt
  • 1/2 c. nuts

Preparation

Step 1

Soak apricots in warm water for 1 hr.

Drain and cut in 1/4" pieces.

Mix sugar, butter, eggs, water and juice well.

Sift dry ingredients.

Add to 1st mixture. Mix well.

Pour in pans.

Let stand 20 min before baking.

Bake at 350 degrees for 45 min.
