FRIED RICE

Ingredients

  • 2 eggs
  • 1 tbsp. sherry
  • 3 c. cold, cooked white rice
  • 1 tsp. salt
  • 1 tsp. br. Sugar
  • 1/2 ts. Garlic salt
  • 1 pinch black pepper
  • 1 pinch ginger
  • 1 tsp. sesame oil
  • 2 tbsp. soy sauce
  • 4 tbsp. peanut oil, divided
  • 1 – 1-1/2 c. chopped broccoli or zucchini
  • 1 onion, chopped
  • 2 handfuls fresh bean sprouts
  • 1 handful sliced fresh mushrooms

Preparation

Step 1

Mix eggs and sherry and stir into rice. Mix brown sugar, spices and
sesame oil and soy sauce in separate bowl. Heat wok until hot. Add
two tablespoons peanut oil to wok and heat. Add vegetable and stir fry 1 tsp. salt until tender-crisp and remove to warm oven. Add remaining two tablespoons peanut oil and reheat. Add chopped
onion. Add rice mixture and stir fry until hot.Add spice mixture and stir fry until thoroughly mixed. Add sprouts, mushrooms and vegetable (from oven) and stir fry until
