Creamy Fettucine Alfredo

Ingredients

  • 4 oz whole wheat fettucine, (or pasta of choice, I use Carba Nada Fettucini Noodles)
  • 1 tablespoon flour
  • 1/2 cup skim or lowfat milk
  • 1/2 teaspoon garlic powder or 1-2 cloves of garlic, pressed through garlic press
  • pinch of salt and pepper, or to taste
  • 3 wedges laughing cow cheese OR 1/3 cup light cream cheese
  • 1/4 cup grated Parmesan cheese
  • Optional: sprinkle of fresh parsley to garnish on top, Parmesan Herb seasoning (by Mccormick)
  • Note: If you want to thicken your sauce a bit, you may add 1 tsp cornstarch to the sauce while it’s on the stove.

In a large pot, bring water to a boil. Add noodles and cook until just tender (about 12 – 15 minutes). Drain well.Meanwhile, In a medium sized saucepan, combine the flour, milk, garlic, salt, and pepper together over high heat. Bring to a boil, then turn the heat down to medium-high.Add the cream cheese (or laughing cow wedges) and Parmesan cheese to the saucepan. Stir until the cheeses melt and are well combined into the sauce, then take off the heat.Taste sauce for seasoning, and add more salt or garlic if desired.Pour sauce over hot pasta and sprinkle on parsley for garnish.
