Marinated Orange Roughy

Ingredients
- 1 lb orange roughy fillets
- 1/4 c water
- 1/4 c dry white wine
- 2 lemon slices, halved
- 1/2 t salt
- 1/4 t terragon
- 1/8 t black pepper
- 3 med carrots, thinly sliced
- 2 T water
- 1 med zucchini
- 2 T butter
- 1/3 c walntus

Preparation
Step 1
Cut fish into 4 equal parts and place in baking dish. In bowl mix 1/4 c water, wine, lemon, salt, terragon and pepper. Pour over fish. Turn fish to coat. Refrigerate 4-7 hrs, turning fish over occasionally. Remove marinade, arrange fish in dish, add carrots and zucchini. Drizzle melted butter over top, cook 350, 10-15 min or til fish is flaky.
