Crimini & Caramelized Onion Sauce

Ingredients
- Wontons:
- 1 tablespoon olive oil
- 1 large onion, thinly sliced (use a mandolin)
- 1 garlic clover, crushed
- 1 pound crimini mushrooms, thinly sliced
- 3 tablespoons margarine
- 1 tablespoon flour
- 1 cup soy milk
- 1/8 teaspoon salt
- Freshly ground pepper to taste
- 1 package (12 ounces) wonton wrappers
- Filling, see recipes
- Canola oil for frying
Preparation
Step 1
1. Heat oil in a large skillet over medium heat. Add onion and garlic; cook until soft and caramelized, about 10 minutes. Add mushrooms; cook until all the liquid is absorbed. Transfer onions and mushrooms to a large bowl.
2. Melt margarine over low heat; in the same skillet. Add flour all at once, whisking until smooth; add soy milk, salt & pepper to taste. Increase heat to medium; whisk until thick and smooth, about 5 minutes. Return mushroom mixture to the skillet; heat through, stirring continuously. If sauce is too thick, add soy milk or hot water to achieve desired consistency. Serve under Crimini Mushroom Wontons.

Wontons:
1. Place a wonton wrapper on a work surface. Brush the bottom ends with a small about of water. Fill with 1 teaspoon filling. Fold the wrapper over filling; press to seal. Repeat with remaining wontons.
2. Pour canola oil to 1/4-inch deep in a heavy skillet; heat over medium-high heat to 350degrees. Fry wontons, in batches, taking care not to crowd them, until golden brown, 30 seconds. Turn; fry other side, 30 seconds. Place on a paper-towel-lined baking sheet to drain. Repeat with remaining wontons.
Mushroom Filling:
1. Heat 1 tablespoon oil in a large skillet over medium-high heat; add 1 medium onion, finely chopped, and 1 clove garlic, crushed. Cook until golden brown. Add the mushrooms.
2. Repeat the above using meat for filling.
