Ingredients
- 2 (8-ounce) cans crushed pineapple, drained with juice reserved
- 1/2 cup water
- 1 (4-serving) package lemon-flavored gelatin
- 3 large carrots, grated
Preparation
Step 1
In a medium saucepan, bring reserved pineapple juice and water to a boil over high heat.
Remove from heat and add gelatin; stir until dissolved. Add grated carrots and the pineapple; mix well.
Pour into a 1-quart gelatin mold; cover and chill until firm, at least 4 hours.
Unmold onto a serving platter and serve.
