Sweet Potato Bites

A great way to use leftover sweet potatoes. And, a very nutritious snack!

Ingredients

  • 12 ounces sweet potato, thinly sliced
  • 2 teaspoons EVOO
  • Salt and pepper
  • Sour cream mixed with dill

Preparation

Step 1

Toss potato with EVOO, salt and pepper; bake at 400 degrees for 20 minutes. Top with dill sour cream.
