Apple Sausage Stuffing!

Ingredients

  • 6 cups light bread, toasted and cubed (about 10 slices, depends on type of bread used) *see note below
  • 1 cup light italian turkey sausage (I like this kind)
  • 1 large onion (or 2 shallots), chopped
  • 1 cup celery, chopped
  • 3 garlic cloves, minced
  • 2 tsp dried poultry seasoning (or to taste)
  • 1/4 teaspoon black pepper, (or to taste)
  • 1 Granny Smith Apple, cut into small cubes (or 1 Pear, cubed)
  • 1 can (14.5 oz) chicken broth
  • 1 egg
  • Optional: 1 cup white mushrooms, sliced, or 1/4 cup Craisins!
  • Note: You may toast bread cubes in a 325 degree oven by placing bread cubes on a baking sheet, and baking for 15 minutes or until bread is toasted. Or you may leave the bread out overnight to dry out a bit.

Preparation

Step 1

Preheat oven to 375 degrees. Prepare a 9×13 baking dish by coating it with non-stick cooking spray. Set aside.
Remove sausage from casings. Sauté sausage in a large nonstick skillet over medium-high heat, breaking it up as it cooks. Cook until sausage is browned (about 5-10 minutes).
Add the onion, celery, and garlic into the skillet, and continue to cook until the onions become tender, (about 4-5 minutes).
Finally, add the chopped apples, (and mushrooms/Craisins if desired) to the saute pan and cook, for an additional 3-4 minutes.
Transfer everything in the saute pan to a large mixing bowl. Add the cubes of bread, the chicken broth, and the egg to the bowl. Stir until the bread cubes are evenly moistened.
Transfer everything into the prepared baking dish, and cover with foil. Bake for 20 minutes, remove the foil, and bake for an additional 15 minutes, or until the stuffing is golden brown and set. (Or you could skip the baking dish step, and simply use the stuffing to stuff your turkey…Or even do half in the turkey and half in the baking dish! )
